tatertots pie

This recipe was passed down to me from my mother. Its been in our family for years and Everyone really enjoys it!! It is very kid friendly and most "big kids" enjoy it too! :))

2 lbs. extra lean ground beef
1 can cream of mushroom soup
1 16oz Sour Cream
1 cup grated cheddar cheese (or more!)
1 pack frozen tatter tots

Preheat Oven For 350 degrees. Grease 13x9 inch pan. Layer the beef on the bottom of the pan, set aside. In a med mixing bowl add sour cream and mushroom soup and mix well. Then layer the mixture on top of the beef, then add cheese. Top with tatter tots. Bake covered for 45 minutes. Uncover and bake 15 minutes longer, adding extra cheese here if desired. Once cheese is melted you will have One fabulous meal Everyone will enjoy!

Crock Pot Lasagna


1 pound Ground Beef
Lasagna noodles
1 jar spaghetti sauce
1 1/2 cups cottage cheese
1 1/2 cups shredded Mozzarella cheese
2 tablespoons grated Parmesan cheese
Directions
Brown ground beef and drain. Spoon 1 C. spaghetti sauce in bottom of 4 quart crock pot. Mix remaining sauce with beef. Place 2 uncooked lasagna noodles on sauce in crock pot. Spread 1/3 meat mixture on top of noodles. Spread 3/4 C. cottage cheese over meat. Sprinkle 1/2 C. mozzarella cheese over cottage cheese. Add another layer of uncooked noodles, 1/3 meat mixture, the remaining cottage cheese and 1/2 C. mozzarella cheese. Place another layer of uncooked noodles, meat mixture, and mozzarella cheese. Sprinkle Parmesan cheese over top. Cook on low for 4 hours.
If cooked much longer, it gets a bit well done.

Spicy meat bulgogi!!!

It can be made with chicken, pork, beef, lamb!!  and is fantastic! Enjoy! 

Spicy Meat  Bulgogi 

1 lb meat (cut into thin, wide slices)
5 Tbs soy sauce
2 cloves garlic, crushed
2 sprigs green onions  (chopped)
1 yellow onion  (sliced)
2 Tbs toasted sesame seeds
1 pinch black pepper
1 Tbs sugar or 1 tablespoon honey
2 Tbs red pepper paste or chili and garlic paste 
2 Tbs red pepper flakes 

Mix all ingredients, refrigerate 1 hour or overnight.
Cook over medium-high heat in frying pan, stirring occasionally until well done and browned.

If using pressure cooker on tough meat add 1 cup of water and let it cook for 45 mins!


Serve with white rice or in lettuce cups. (I would also recomend serving it with Kimchi- a spicy cabbage dish you can find at the grocery store in a jar, or make homemade!)

Perfect dinner rolls!

My go-to, favorite recipe for rolls has to rise overnight, so I don't make them very often.I was in a hurry the other day, so I made these delicious alternatives, which only take 2 hours of total rising time and are equally as light and fluffy!

Ingredients: 1/2 cup warm water
 1/2 cup warm milk
1 Tbs. (1 pkg) active dry yeast
1/3 cup sugar
1 egg
1/3 cup butter,softened
1 teaspoon salt
3 3/4 cups flour

Directions:In a small bowl, mix the water and milk and microwave for about 45 seconds, or until warm. Add the yeast and set aside for 10 min. (This is called "proofing" the yeast).Add sugar to the yeast mixture.  In a large bowl, combine the flour and salt. Add the yeast mixture, egg and butter and beat until combined.Pour dough onto floured counter top and knead for about 10 minutes; until smooth and elastic.Place dough in large, greased bowl and cover bowl with a dry towel. Let sit in warm place for 1 hour.

After the first rising, divide the dough in half and place on a floured counter top. Roll each peice of dough into a 12 inch circle. Cut the dough like a pizza, into 8 "pizza" slices.Roll each slice starting at the "crust" end (the wide end) rolling all the way over the tip. Roll gently, but tightly.Place point side down on an ungreased cookie sheet.

Cover with a dry towel and put in a warm place, let rise 1 hour.Preheat oven to 375 degrees F. After the second rising, bake the rolls for 8-10 minutes, or until golden brown.

Crispy Baked Parmesan Green Bean Fries

Ingredients:

1 (14 oz) Bag of frozen whole green beans (or about 4 cups fresh)
1/4 cup Parmesan cheese, grated1/2 tsp Garlic powder1/4 tsp Salt (or to taste)1/8 tsp Pepper (or to taste)

Directions:

1) Preheat oven to 425 degrees. Line a baking sheet with foil, and spray with non-stick cooking spray.

2) If using frozen green beans, pop the bag of green beans in the microwave for 3-4 minutes, or until just thawed (or you could leave them out at room temperature for a few hours). If using fresh green beans, wash and snip off the ends. 

3) Place green beans on prepared baking pan, making sure they are evenly spread out, and none are laying on top of each other, (this will ensure even crispiness!) Sprinkle seasonings and Parmesan cheese evenly over green beans. 

4)Place green beans in the pre-heated oven and bake for 10-15 minutes, or until golden brown and crispy! Enjoy immediately with dipping sauce of choice.

scalloped potato :)

Ingredients

3 lbs potatoes, peeled and thinly sliced
1 medium onion, peeled, halved and thinly sliced
1/4 cup flour
1 1/2 tsp salt
1/2 tsp pepper
6 Tbsp butter, cubed, divided
2 cups grated cheddar cheese
3 cups milk (approximately)

Preparation
1. Preheat the oven to 375 degrees. In a small bowl, combine the flour, salt and pepper. Heat the milk gently over low heat in a saucepan.

2. Spray a 9 x 13-inch rectangular or 1 1/2- to 2-quart round casserole dish with cooking spray. Layer a third of the potatoes in the bottom. Top with half of the sliced onion. Sprinkle half of the flour mixture over the onions and dot with 3 Tbsp butter. Top with 1/2 cup cheddar cheese. Repeat layers once. Top with the remaining potatoes and the remaining 1 cup of cheese.

3. Pour the milk over potatoes. You may use more or less than 3 cups of milk, depending on the size of your casserole dish. You want enough milk to cover the potatoes, but not so much that it overflows the pan.

4. Cover with foil and bake 1 hour. Uncover and bake for 30 minutes, or until potatoes are fork-tender.
